Watermelon is known to have a high-water content, antioxidants, and amino acids, making it the number one hydration buddy for the summer. It is also high in potassium, along with vitamins A and C. It is sweet and packed with lots and lots of water, which is an excellent source of hydration, as it is made up of 92 percent water. Watermelon’s health benefits also include the fact that it is low in calories and high in fiber – a combination that makes it an excellent food choice for people who are trying to lose weight.

Mix it with some savory ingredients and have yourself a perfect salsa.

Watermelon Salsa Recipe by Chef Sanjeev Kapoor, Fast&Up, Goodeatz 

Watermelon salsa is perfect for a dip with tortilla chips. The sweetness of the watermelon is balanced by the heat of the jalapeño and the freshness of the cilantro, making it a flavorful and healthy addition to any meal. Combine diced watermelon with diced tomatoes, red onion, jalapeno pepper, cilantro, and lime juice for a sweet and spicy salsa.

Ingredients

2 cups seeded and chopped watermelon

1 large onion, finely chopped

½ medium yellow capsicum chopped

2 pickled jalapeños, chopped

¼ cup finely chopped fresh coriander leaves

2 green chilies, chopped 

½ teaspoon crushed black peppercorns

2 tablespoons lemon juice

Salt to taste 

Tortilla chips for serving  

Method 

In a mixing bowl, add watermelon, onion, yellow capsicum, jalapeños, coriander, green chilies, crushed peppercorns, lemon juice, and salt. Mix well. Chill in the refrigerator for 30-40 minutes.
